Let me be frank with you guys, if you came here for my best food photography. I’m sorry! Today’s recipe is all about ease and deliciousness. My family has been very committed to embracing healthier meal choices this year. We have certainly had to get more creative since the school year started and our time has become more limited. So, I had to share this recipe we recently tested out! It is fast, delicious, and can be served multiple ways. Here in Portland, our local Safeway stores carry an incredible brand of pork products called Open Nature. We had to kick off October (which is national pork month!) with a great recipe to savor with your family. I have grown to love the Open Nature brand, which in Portland can be found exclusively at Albertsons and Safeway stores. Open Nature pork is of the Duroc heritage breed. Duroc is esteemed by chefs for its high-degree of marbling, which translates into a more tender, juicy, and flavorful eating experience. Duroc pork makes it “fool-proof” to prepare a delicious entrée. Open Nature pork is antibiotic free (no antibiotics ever), 100% vegetarian fed, has no added hormones and is raised crate free.

Here’s what the package looks like:

I cut my tenderloin into three pieces with one tablespoon at the bottom of my pressure cooker.

I also sprinkled some sesame seeds in, and poured in 10 oz. of teriyaki sauce! Steam for 20 minutes.

From there, I actually shred with a hand mixer. (a stand up mixer works great too) I’ve found this provides the best way to shred meats.

After shredding it, I serve them on rolls. One trick I suggest: I’ll prepare this dish in the mornings while I’m packing lunches. A few minutes before dinner time, I’ll warm them in the oven.

This is so delicious with coleslaw or salad!

Don’t forget While you’re at Safeway to grab some gorgeous blooms from their impressive debi lily design collection! This dish with a gorgeous bouquet as a centerpiece make for the perfect impromptu dinner party. I love that when I’m shopping at Safeway, I can get such quality items for every facet of my life in one place.
