Meal Plan Monday! Recipes for the school year!

As we head into the busy season of the first weeks of school, or even just because it’s the last weeks of summer and no one wants to waste precious sunshine -indoors preparing food.  I’m going to be some crazy easy meal ideas.

  1. Korean Bulgogi.  You’ll need to get 2 lbs of Chuck Roast, and cut it have the butcher cut into 1/8 inch super thin tiny pieces.  Marinade- 2 teaspoons apple cider vinegar, cover the meat in soy sauce, 1/2 cup of brown sugar (more to taste) add chopped onions and garlic.  Let sit for several hours.  Add it into a skillet and cook thru.  Serve with rice and Kimchi.
  2.  Pulled BBQ Chicken Sandwiches – So on Sunday, I want you make several pounds of chicken for 3 recipes- chicken salad, BBQ chicken sandwiches, and chicken enchiladas.  Make about four lbs in a little chicken broth in the crock pot for 5 lbs.  Shred.  Store some of the chicken for recipes later in the week, but for BBQ
