Meal Prep Recipes With Barilla Chickpea Pasta!

Since my boys are officially school age now, our time together in the evenings is honestly quite sacred. Quick dinners are essential to maximizing our family time together, and making sure we are able to eat a nutrient rich meal even with our limited time. I hate to say it, but our time together flies by. Both of my boys love eating pasta and my husband lived in Italy as a kid for years so pasta is such a comfort to him. I’ve always been a touch conflicted as it’s obviously not the healthiest option available! We’ve been on the prowl for healthier alternatives to traditional pasta dishes that give us ample taste and yet top notch nutrition.

There’s something so comforting to me to see it only has one ingredient.

For me, this gives me the confidence I need to prep it quickly for my family and serve with a simple salad. I can prep it in only a few minutes, as it cooks al-dente in 7-9 minutes! 

For our family, I like to chop up a bunch of fruit and salad ingredients on the weekends so meal time goes smoother during the weekdays. We all know how crazy it can be after school and extracurricular activities.

Anytime I can, I will make double batches and this easy combination will yield two great dinners for your family!

Start by making a box of Barilla Chickpea Pasta (you can grab some on Amazon!)

For the first variation, you’ll only need one jar of your favorite pesto sauce.


I just mix the two together for an easy dinner. I will then serve it up with some of the fruits and vegetables that we prepped over the weekend.



For the next evening’s dinner– I take the remaining pasta and put it into a casserole dish.
-Marinara sauce
-Chopped zucchini
-3 oz. mozzarella cheese

Chop the zucchini pieces into round pieces.

Place on top of pasta

Pour marinara sauce on to the zucchini and pasta.

Place the mozzarella cheese on top

When you’re ready to bake this dish, bake at 375 for 25 minutes!
